Ingredients

    96 gram(s) Bob's Red Mill Old Fashioned Rolled Oats (Gluten Free)--1/2 C dry = 48g
    1 cup, chopped Walnuts
    1 cup, ground Almonds
    1 tsp Cinnamon, ground
    0.75 cup Sun Maid, California Chopped Dates
    0.5 cup (8 fl oz) Water, tap
    1 large (8" to 8-7/8" long) Banana, fresh
    0.50 cup Cranberries, dried (unsweetened) (by DHARMAHEART)
    1 tbsp Vanilla Extract

Tips

Original recipe called for Goji berries - swap out an equal amount of dried fruit of your choice.
Melt and drizzle with an unsweetened dark chocolate if desired (calculate additional calories)


Directions

In a high-powered blender blend oats until a flour forms. Add to large bowl and repeat the process for the walnuts and almonds. Don't over-process or they'll turn to a paste. Add to the bowl and break apart any clumps. Mix in cinnamon.
Add dates and water to blender and process until a slurry forms. Add banana and blend. Add date mixture to dry ingredients and mix until no flour remains. Stir in vanilla and cranberries.
Lime an 8-inch square pan with foil or parchment. Scoop the dough into the pan. Dip a knife in water and spread dough until smooth. Place in freezer for 30 minutes.
Can be eaten straight from freezer or heated in microwave for 30-45 seconds.
