Ingredients

    3/4 cup whole wheat pastry flour
    3/4 cup all-purpose flour
    3 1/2 tbsp. brown sugar
    1/2 tsp baking soda
    1 1/8 tsp baking powder
    1/4 tsp salt
    1 tsp cinnamon
    1/4 tsp allspice
    1/4 tsp nutmeg
    2 large eggs
    1 cup buttermilk
    1 cup canned solid-pack pumpkin
    1 3/4 tbsp unsalted butter, melted
    1 3/4 tbsp canola oil

Directions

Makes 10 waffles

Combine all dry ingredients in a large bowl and blend well. In a separate bowl add pumpkin, buttermilk, eggs, oil and butter and whisk. Pour the pumpkin mixture into the dry ingredients and mix to combine (do not overstir or the waffles will become tough). Set waffle iron on a high setting, and when heated pour in the batter. For my waffle iron it took about 4 minutes/ side.

    I made a variation of this - I used a "complete" waffle mix, added canned pumpkin & almond milk & baking cocoa to make the consistency of a waffle mix and it was delicious!!!! - 3/1/09

    I've been searching for a good pumpkin waffle recipe. I made the recipe exactly as printed. Sometimes pumpkin spice is too strong in these types of recipes. The balance of spices was just right. - 4/4/15

    Incredible!
    I used this recipe, but separated the eggs, beat the whites to stiff peaks, then folded them into the batter. Also, I made them on a Belgian Wafflemaker, so ended up with 4 waffles, total. These turned out great, and I will use the recipe, again. - 11/27/11
