Ingredients

    6 oz Baby Bella Mushrooms (about 8 mushrooms)
    .25 cup, chopped Onions, raw
    .5 T Olive Oil
    1 clove Garlic, pressed
    2 oz Neufchatal Cheese (low fat cream cheese)
    3 oz Cooked Cocktail Shrimp, chopped
    1.5 T Liquid Egg Product (3 T = 1 egg)
    2 T Cornbread stuffing crumbs
    .25 cup Parmesan Cheese, grated
    1 T minced fresh Parsley
    .5 T chopped Fresh Chives
    Black pepper to taste


Tips

You might want to sprinkle a T of grated parmesan on the mushrooms before baking. (The extra parmesan is not included in the nutrient calculations here.


Directions

Separate the stems from the mushrooms. Chop them finely.
Sauté the chopped mushroom stems with the chopped onion, with the olive oil. When cooked, press in the garlic and cook just a little bit more to bring out the garlic aroma. Put the cooked mixture in a small mixing bowl.
Add all remaining ingredients to the bowl. Mix well.
Oven s/b set to 375 F.
Put about a T of the mixture into each mushroom cap. Use your fingers to help get the mixture down into the cap.
Bake for 20 minutes.

Serving Size: Makes 2 servings, 4 mushrooms each
