Number of Servings: 3

Ingredients

    1 chicken breast, cooked & diced
    1 Tbsp Miracle Whip Light
    1 cup seedless grapes, sliced in half
    1 cup apples, quartered or chopped
    1 small box raisins
    2 inner leaves Romaine lettuce
    2 thin slices whole wheat bread
    Salt & pepper to taste

Directions

Combine sliced grapes, chopped apples, and raisins in large mixing bowl. Add in diced cooked chicken. Add Tbsp of Miracle Whip Light. Mix together with large wooden spoon until salad is evenly blended and coated with dressing. Add salt and pepper to taste.

Place 1/3 of finished salad on slice of whole wheat bread. Top with lettuce and cover with other slice of bread. Cut in half or quarters.

Makes 3 sandwiches

    I made this last night and I LOVE it! However, 1 tbsp of Miracle Whip didn't quite do it for me, so I'm sure there were more calories in mine. In the future I plan on adding walnuts and celery and using a wrap instead of bread. - 4/2/14

    This was wonderful! I used Kraft Mayo with Olive Oil and added sliced almonds and celery. I did wonder if the bread was counted in the nutritional info as there are only 2 slices in the recipe. Definitely a keeper! - 9/29/11
