Introduction

Ingredients

    4 tbl spoons olive oil
    1 small diced onion
    3 tsp diced/pureed garlic
    3 lg cans, stewed/pureed caned tomatoes
    3 tbls parsley
    2 tbls red pepper flakes (adjust to your taste)
    4oz pink wine (or use your favorite type)
    2 cups Frozen mixed vegies
    1 cup sliced mushrooms
    1cup fresh choped Broccoli
    1/2 cup parmesan cheese, grated
    4 cups whole wheat pasta

Directions

In large pot, cook onion and garlic in olive oil untill the onion starts to brown. add to pot, caned tomatoes, parsley, wine, and pepper flakes.
Puree the mix in pot with a hand mixer or in a food processor. simmer tomato base for 30 min.
add all vegies to tomato base. add in pasta, mix untill it is well coated in sauce (if there is not quite enough sauce retain some pasta) cover and alow to heat , stiring often. put on plate(s) and sprinkell with cheese. enjoy
