Ingredients

    500 g Minced (Ground) Beef
    1 cup diced Onion
    1 cup grated Zucchini
    1 cup grated Carrot
    2 tsp minced garlic
    1/2 Jar (250g) Pasta Sauce (Raguletto Bolognese)
    200g (2 cups) Penne Pasta
    Grated Low-fat cheese to serve.

Directions

DIRECTIONS:
Place saucepan of water on stove to boil (for pasta).

Place mince in Pan/skillet, add onion and garlic, and cook until mince is browned and onions are clear. Drain fat.

Add carrot and zucchini to pan, mix thoroughly.

Stir over low heat until water in saucepan is boiling.

When water in saucepan is boiling, add penne pasta and cover.

Add pasta sauce to mince mixture and cover. Simmer over a low heat for 15 minutes, stirring occasionally.

TO SERVE:
Place 1/5 cooked pasta on a plate with 1/5 mince mixture, serve with reduced fat grated cheese.
