I took 2 spark recipes and modified them together.. It was really tasty and very filling.. It was like dessert for breakfast, my kids enjoyed it as well..Number of Servings: 1
Ingredients
-
- 2 slices Raisin Bread (I used Aunt Hattie's )
- 1 Egg (I am sure you could use egg whites or liquids eggs as well..)
- .25 cup fat free milk ( Soy milk would work)
- Sugar free maple syrup (if wanted)
- Peanut Butter ( I used 1 tbsp but you could use more or less)
- .5 tbsp ground cinnamon
- .5 vanilla extract
Directions
1. spread a thin layer of peanut butter on the bread and put them together, like a sandwich.
2. add egg, milk, cinnamon, vanilla and beat together in a small shallow dish.
3. put peanut butter sandwich in mixture, don't let soak or it will become soggy. Turn over and do the same ot the other side. Let any excess egg mixture drip off..
4. Put into nostick pan.. cook each side until golden brown and all egg mixture cooked.. I cooked on medium heat, so the bread didn't burn. It takes about 4 minutes each side..
5. Pour sugar free maple syrup on top.. You could also put some butter on top if wanted..
Enjoy
Serving 1
(but you could easily add a little more ingredients to get more servings.. I added 1 more egg to get another 2 more sandwiches.)
