Introduction

This is a variation on another recipe I saw here. I really like white pizzas. Yes, this is a bit high in the fat and sodium, but most pizza usually is and for the most part the fat in this is "good" fat. This satisfies my pizza craving for a lot few calories and a lot less money than ordering from a pizza delivery place. This is a variation on another recipe I saw here. I really like white pizzas. Ingredients

    1 Joseph's Flax, Oat Bran & Whole Wheat Pita
    2 Tbsp Plain Hummus
    1/4 Cup Fresh Baby Spinach Leaves
    6 thin slices Roma Tomato
    1/8 Cup Fresh Mushroom Slices (I used Baby
    Bella Mushrooms)
    0.8 oz Reduced Fat Feta Cheese
    (about 3 Tbsp)

Directions

Crisp both sides of pita in a skillet on stove; spread hummus on pita, layer spinach, tomato and mushrooms on hummus; sprinkle feta on top; microwave 30 seconds to 1 minute until cheese melts; slice and enjoy.

Makes 1 serving.
