Ingredients

    1 c candied pineapple
    1 c candied mango
    2 c seedless raisins
    2 c currants
    1/. c soft butter
    1/2 c soft shortening
    2 c white sugar
    1 tbsp vanilla
    1 tbsp almond extract
    12 lg eggs
    1 c grape juice
    1/2 c honey
    1 c pitted dates chopped
    1/2 c mixed candied peel
    1 1/2 c halved candied cherries
    4 1/2 c flour
    2 tsp cinnamon
    2 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    1 tsp nutmeg
    1/2 tsp ground cloves
    1 c chopped almonds
    1 c chopped pecans

Directions

Mix all the fruit and nuts together and set aside
Mix all the driy ingredients together except the sugar and set aside
In a mixer mix the butter, shortening, sugar, vanilla
almond extract, grapejuice, and add the eggs one at a time.
Take one cup of the dry ingredients and dust the fruit coating all the pieces. Add the rest of the dry ingredients to the liquid mixture in the mixer.
In a large bowl combine the fruit and the liquid mixture mixing well.
Coat five 8 1/2 x 4 loaf pans with heavy tin foil and grease with no salt shortening or cooking spray.
Spread dough evenly in pans and cover the top with greased parchment paper . Place on the center rack of the oven . Bake for 2 - 3 1/2 Hours depending on the pans you use in a 275 degree oven. After 1 hr place a cake tin with water on the bottom oven rack to keep the the cakes from drying out

This makes 5 cakes and serves about 90 people
