Introduction

This is a delicious filling soup thats so easy to make This is a delicious filling soup thats so easy to make
Number of Servings: 4

Ingredients

    2 sweet potatoes chopped
    4 carrots chopped
    2 sweet peppers chopped(i use 1 red and 1orange but its entirely up to personal taste)
    2 leeks chopped
    4 celery stalks chopped
    2 chicken bouillion cubes
    1-2 cups of water depending on desired thickness of soup
    pepper to taste

Directions

This soup really is amazingly simple to make
simply place all your ingredients in a saucepan with enough water to cover (you can add more water if you prefer a thinner soup) bring to boil then simmer until the vegetables are tender when tested with a fork.
Then either using a hand blender or food processor etc blend until smooth add some freshly ground black pepper to taste and enjoy!

    This soup is great! It did need a little spicing up though. I added curry which blended very well. I agree that next time I will use more sweet potatoes and less carrots. It's a little sweet. - 1/27/08

    A veggie packed soup, but neither my partner nor I really liked the taste. The sweet potatos were overwhelmed by the taste of carrots, and overall it was pretty bland. We whipped up a pesto garnish (pesto and sour cream) which made it palletable. I would skip the carrots and add some seasoning. - 6/6/07
