Introduction

Ingredients

1 cup quick oats
1 cup non fat milk
1/2 cup unsweetened applesauce
2 eggs
1 cup whole wheat flour
1/2 cup brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
Directions
Preheat oven to 400 degrees.
Mix oats and milk in mixing bowl, let sit until milk is soaked up, can be refrigerated over night. Takes about one hour. Add applesauce and eggs stir well.
Add all dry ingredients stir until combined.
Bake in muffin tins lined w/muffin paper or spray with cooking spray. divided up into 16 muffins equally. 20-25 minutes. cool and enjoy.
