Introduction

These veggies are a hit in my house, but you can use any vegetables you want. These veggies are a hit in my house, but you can use any vegetables you want.
Number of Servings: 4

Ingredients

    1 Medium Orange Pepper
    1 Medium Yellow Pepper
    1 Medium Red Pepper
    2 Medium Zucchinis
    1 Red Onion
    2 Cloves Garlic
    2 Tablespoons Extra Virgin Olive Oil

Directions

Preheat oven to 450. Cut peppers, zucchini and onions into bite size pieces. Place in a roasting pan or cookie tray. Add minced garlic, olive oil, salt and pepper to taste and mix to coat all veggies. Roast in middle of oven for 30 minutes, stirring occasionally.

    Easy and delicious! Could add eggplant, but I didn't have any. I cut the recipe in half (omitting the red and orange pepper because I didn't have any). So glad, I have leftovers, it's that good! - 5/18/12

    Incredible!
    I added some asparagus, summer squash, and italian seasoning. Also, I only used 1 tbsp of olive oil along with some olive oil cooking spray to reduce the calories. This is my favorite way to get in lots of servings of veggies!! - 6/25/11

    Very Good
    This was awesome! I added potato, onion & squash & omitted peppers. Instead of salt & pepper I used Mrs. Dash. YUM! Great way to cook veggies.
