Introduction

A little work roasting the yam chunks, but very yummy! A little work roasting the yam chunks, but very yummy!
Number of Servings: 6

Ingredients

    2 Cups roasted Yam chunks
    1/2 Cup sliced purple/white onion
    1/2 cup canned corn or small can of yellow corn
    2 cups or 1 can of black beans
    2 T olive oil
    1/4 Cup vinegar
    Fresh spinach as you like
    salt and pepper to taste

Directions

Chunk up enough yams to make 2 cups. Roast in 350 degree oven for 30 minutes or until tender.
Combine ingrediants and serve as cold salad or in a wrap with baby spinach leaves. Substitute your favorite light dressing/fat free dressing for the oil and vinegar if you like.
