Introduction

These are made in a muffin pan and are a quick grab in the morning. I have two versions. This one has less cheese than the original so the spinach really takes the lead. Ingredients

    1 package (10 oz) frozen spinach
    3 large eggs
    1/4 cup (1 oz.) shredded cheese:( 2% milk Mexican Four Cheese is good)
    1 Tablespoon mustard
    hot sauce

Directions

1 - Microwave (or thaw) the spinach and drain off the excess water
2 - Combine eggs, cheese, and spinach in a bowl and mix
3 - Line a muffin tin with 6 cupcake liners. Fill with the batter.
4 - Bake 350 degrees for 20 minutes.
5 - Put a splash of hot sauce on top. (OK - this may not be for everyone but it sure does give it a nice kick)

    I LOVE THE IDEA OF THIS! I modified the recipe though: 6 eggs for 6 quiches. I added some finely chopped raw onion, zucchini, tomatoes and mushrooms. Also added some fresh herbs (basil and oregano) and feta instead of shredded cheese. - 7/14/10

    I didn't read where anyone had any problems with these sticking to the cupakes papers!! I loved them, but was a real pain eating them! Next time I will either spray the papers or not use papers and just spray the muffin tin. I added a little of Paula Dean's House seasoning. - 7/14/10
