Introduction
I use a whole wheat tortilla to give the quiche a "bottom". It makes it easier to serve and can be eaten or just left on the plate after serving. Ingredients

1 Whole Wheat Tortilla
1 Cup egg substitute
3 XL eggs
1 cup milk
1 tsp butter
1 cup fresh mushrooms diced
1 cup diced red pepper
1 tblsp diced garlic
1/2 c. diced onion
1 tsp salt
1/4 tsp black pepper
1/4 tsp chili pepper
1/2 tsp dried parsley
1 cup cheddar cheese
Directions
Place the tortilla in an 8 or 9 inch pie dish.
Melt the butter in a fry pan and add the onions, garlic, mushrooms, peppers and cook until all are softened. Place the cooked vegetables into the bottom of the pie dish, on top of the tortilla. Layer the cheese on top of the vegetables.
Mix the egg substitute, eggs, milk, salt pepper, chili pepper and parsley in carefully pour over the vegetables and cheese in the pie dish.
Bake at 350 degrees for 30 minutes, until it is a light golden brown and a knife poked into the middle comes out clean.
If you like the larger serving, I cut this in 4 pieces for a full meal. Each quarter of the pie is 282.7 Calories.
