Introduction

This is a nice sugar free, lower carb pie. Suitable for company. As it cooks it layers into a nice coconut top crust, a creamy custard center and even a thin bottom crust. Ingredients

    1 2/3 cups 1% milk
    1/3 cup fat free half and half
    2/3 cup splenda for baking (or your favorite sweetner)
    1 cup UNSWEETENED shredded coconut
    1/2 cup flour
    3 eggs
    1tsp corn starch
    dash of salt
    2 tsp vanilla extract

Directions

Put all ingredients into a blender and mix until incorporated.

Pour into a greased (I used butter flavored Pam) 9 inch pie plate.

Bake at 350 degrees for 50 minutes (or until the top is browned a bit).

***LET COOL 30 MINUTES BEFORE SLICING OR IT WILL FALL APART*** Serve warm or cold.
