Ingredients

    16 jumbo shrimp
    1 red bell pepper
    1 yellow bell pepper
    1 zucchini
    1 summer squash
    8 large mushrooms
    1 small red onion
    1 cup sweet and sour sauce
    1/2 cup pineapple chunks


Directions

Stack shrimp, peppers, zucchini, squash, mushrooms, and red onion onto long skewers.

Mix 1 cup sweet and sour sauce with pineapple juice reserve from can. Use to baste shrimp and veggies before, during, and after cooking.

Cook on medium until shrimp is cooked through.

    I didn't use the squash and took off yellow pepper for green but it was really good. It doesn't take long to make - 12/17/09

    Good
    I did not have mushrooms and used green pepper in place of the red pepper. My family liked this and I will most likely make it again (we used a homemade sweet and sour sauce too). I get sick of the sweet and sour sauce, but the shrimp is very tasty if you do not add extra sauce (only use in basting) - 8/31/10
