Introduction

Quick and easy way to get your veggies all cooked in a single pan. I use agave instead of honey for less impact on blood sugar. If you don't have broth, use bouillon or water. Ingredients

    1 bunch of Swiss Chard
    1/2 bag of baby carrots cut into matchsticks
    1 medium onion sliced
    2 cloves of garlic minced
    1 Tbsp olive oil
    1/2 cup broth, water or bouillon
    1 tsp honey or agave
    1Tbsp balsamic vinegar

Directions

Heat olive oil in large nonstick skillet. Add onion and cook until lightly brown. Add garlic and saute for 30 seconds. Add broth, should cover bottom of pan, and carrots. Cover and simmer for 5 minutes. Add chard and cover and simmer for 10 minutes. When carrots and chard are tender, stir in balsamic vinegar and honey or agave. Serves 4.

    This is delicious! Taking ideas from other reviewers, I added the stems with nions, and garbanzo beans with carrots. I used regular carrots and sliced them thin as I didn't have baby carrots. I waited about 5 minutes after adding the carrots to add the broth. Served over couscous. - 2/17/12
