Introduction
SO good! SO good!Number of Servings: 2
Ingredients
-
1/2 cup fresh orange juice
1 tbsp lime juice
1-2 tbsps olive oil
4 cloves garlic
1 tbsp packed fresh oregano leaves
1 tsp salt
1 tsp black pepper
1 tsp ground cumin
2 6-oz boneless skinless chicken breasts
Directions
1. Add first seven ingredients (juice though cumin) to a blender or food processer and blend until smooth.
2. Pour marinade into a ziploc bag and add chicken, sealing bag and turning to thoroughly coat chicken. Marinate at room temperature for 20-30 minutes (but not more than 30 minutes).
3. Preheat broiler to high. Line a sturdy sheet pan with foil. Remove chicken from marinade (reserving marinade) and add to pan. Broil for 12 minutes, turning breasts over halfway through cooking time. Remove from oven and let chicken sit for five minutes to allow juices to redistribute. Makes two generous servings.
Optional step: While chicken cooks, pour reserved marinade into a small saucepan. Add 1/4 cup orange juice and 1 tbsp tequila to pan. Bring to a boil and let simmer until reduced by half - mixture should be slightly syrupy and coat the back of a spoon. Pour over or serve alongside chicken.
