Ingredients

    1/4 cider vinegar
    1 tsp canola oil
    1/2 c. chicken broth
    1 lb. boneless pork
    1 bunch broccoli
    1 C. carrots, chopped
    3 medium scallions
    1/2 C. walnuts chopped
    2 T. soy sauce
    2 T. cornstarch

Directions

Mix cornstarch, broth, vinegar, soy sauce & 2 t. oil, set aside

Stir fry pork in non-stick pan; remove & keep warm

Stir fry carrots & broccoli.

Stir in broth mixture & scallions. Bring to a boil, cook & stir approx. 2 minutes. Add meat & nuts to pan & heat through.

Serve with brown rice
