Ingredients

    4 C vegetable or chicken broth
    4 C tomato juice
    1 TBSP dried basil leaves
    1 tsp salt (optional)
    1/2 tsp dried oregano leaves
    1/4 tsp ground black pepper
    2 - 3 medium carrots (1 Cup) sliced
    2 - 3 medium celery stalks (1 cup) chopped
    1 C sliced mushrooms
    2 cloves of garlic, finely chopped
    1 - 28 oz can diced tomatoes, undrained
    1 1/2 C uncooked rotini
    shredded parmesan

Directions

makes 12 1 1/2 C servings

1. combine all ingredients EXCEPT pasta and Parmesan cheese in a 4-5 qt slow cooker.
2. Cover and cook on low heat 8-9 hours (4-6 on high).
3. option 1: Stir in pasta & increase heat to high. Cover & cook 15 min. until pasta is tender.
3. option 2: when ready to serve, cook pasta separately on cook-top per package instructions and portion individually and serve with soup poured over rotini.
4. sprinkle each serving with shredded parmesan cheese and ENJOY!

    Very Good
    This was so easy and very tasty! Even my husband liked it. I used low-sodium for all the canned goods to make it a little healthier. - 4/20/09
