Introduction

A hearty vegetable beef soup, great for lunch or dinner. A hearty vegetable beef soup, great for lunch or dinner.

Ingredients

    1 teaspoon olive oil
    1 pound stew beef, cut into bite-sized pieces
    1/4 cup chopped onions
    1/2 cup pearled barley (uncooked)
    1 cup fresh or frozen carrot 'coins'
    1 cup cut green beans
    1/2 cup sliced celery
    3 cups beef broth
    3 cups water
    1/8 teaspoon ground black pepper
    1 bay leaf
    Salt to taste

Directions

Coat the bottom of a large sauce pan with olive oil. Brown the beef pieces and onion in the oil. Add the barley, pepper, bay leaf, broth and water. Simmer for 15 minutes. Add the carrots, green beans and celery. Simmer an additional 45 minutes, or until the barley is cooked and vegetables are tender.

Makes (about) 5 1 1/2-cup servings. Salt is not included in nutritional data.
