Introduction

I invented this while waiting at a sub shop for my husband's steak and cheese when I REALLY wanted a Gyro.....figured I could make a healthier version. Ingredients

    1 slice onion
4-5 thin strips of green bell pepper
    Pam cooking spray
    2 slices pre-packaged roast beef
    1 flatbread
    1 Tbsp Tzatziki
    1 plum tomato - seeded & diced
    2 (1/4 inch) slices cucumber - diced
1 oz mozzarella cheese - finely shredded

Directions

Heat skillet and spray with Pam. Add onion and pepper and cook till desired done-ness. Meanwhile, spread Tzatziki on flatbread and dice up your tomato and cucumber. Add roast beef to skillet when onions are almost translucent and stir frequently. (FYI: I sliced my roast beef, but I guess you could leave it whole.) Place hot contents of skillet onto flat bread. Spray skillet with Pam again and reduce heat slightly. Place flatbread in skillet to warm it a little and add cheese to toppings. When cheese begins to melt, remove from heat and top with tomato/cucumbers. Salt and pepper to taste. Enjoy! This is a MESSY sandwich, but it ROCKS!
