Ingredients

    1 can (6 oz.) tuna, drained
    1 large yam, sliced into 1/4 inch rounds
    1/2 medium red onion, sliced into rings
    1/2 medium red pepper, cut into chunks
    1 tbsp fresh basil or 1 tsp dried
    fresh ground black pepper
    1 tbsp olive oil
    1 tbsp balsamic vinegar
    1 tbsp lemon juice
    1 tbsp butter
    1 tbsp flour
    1/2 cup grated Parmesan cheese

Directions

Preheat oven to 350 f.
Place yams, red onion, red pepper, basil and fresh ground pepper in a 9 x 13 casserole dish. Blend oil, balsamic vinegar and lemon juice and combine gently with the vegetables. Cover and bake for 20 to 30 minutes.

In saucepan over medium heat, melt butter. Add flour and then add milk stirring constantly. When mixture has started to thicken, remove from heat and add grated cheese. Stir until cheese has melted.

Remove vegetables from oven and place drained tuna in pieces on top. Pour cheese sauce over all.

Bake covered for 15 min., then uncovered for an additional 5 minutes.

    when I went to make this it doesn't say how much milk to use in the cheese sauce so I made a thick sauce, next time I would use a thiner sauce. - 9/10/08
