2 cups sugar
1 cup cooking oil
3 eggs beaten
1 teas. vanilla
3 cups flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon cinnamon
4 cups grated drained zucchini
1/2 cup chopped walnuts ( opt.)
Directions
mix eggs, sugar , oil and vanilla together. Sift dry ingredients and add to sugar mixture. add zucchini and mix well. add nuts if desired.
Bake at 325 for 55 min. in greased loaf pans
makes 2 loaves
