Ingredients

    ½ cup sliced onions
    1 cup sliced multi color peppers
    1 tbsp. olive oil
    1 clove garlic, minced
    1 tsp. cumin
    7 oz. frozen shrimp, thawed
    3 tbsp. chopped fresh cilantro
    1 lime, juiced
    1 small whole grain tortillas
    1 tbsp. low fat sour cream (optional)
    1 tbsp. guacamole (optional)

Directions

Sauté onions and peppers in oil with garlic and cumin for a few minutes, add shrimp and cook for about 5 min. or until shrimp turn pink. Toss in cilantro and lime juice. Fill tortillas with mixture and top with sour cream and guacamole.
