Introduction

This is a recipe I came up with as an alternative to the greasy fried rice that's available in restaurants. The flavour is similar, but without the unnecessary fat. This is a decent recipe for one, but for a family you can multiply it as many times as you need to. Ingredients

    **1 large egg
    **1/2 cup cooked brown rice (or white rice if that's what you have -- brown has more fiber and more flavour)
    **1/4 cup frozen peas
    ** 1 TBSP Tap Water

Directions

**Break the egg into a bowl and mix it well.

**Add the water to help make the egg fluffy if you would like.

**Take the 1/2 cup brown rice and mix it into the egg.

** Add any extra seasonings as you like to the mixture (I often do Pepper, Red Pepper Flakes, or a shake of hot sauce -- but you can use whatever you like)

** Heat a frying pan that's been sprayed with nonstick spray

** Meanwhile, defrost the peas for 30 sec in the microwave.

** stirfry the egg-rice mixture and once it's about half cooked add the defrosted peas

** the fried rice is done when the egg is cooked and the peas hot.

This makes one serving but can easily be multiplied if you are making it for more than one person.
