Introduction

A quick and tasty way to serve chicken with an enjoyable conclusion. I modified this from a veal marsala recipe I had and used the chicken and grape juice instead of veal and wine. Ingredients

    2 - 5 oz. thin sliced chicken breasts (cutlets)
    Salt and pepper to taste
    All-purpose flour
    2 tablespoons butter, melted
    1/3 cup white grape juice
    1/2 cup 99% fatfree chicken broth

Directions

Place cutlets on waxed paper, and flatten to 1/8-inch thickness with a meat mallet or rolling pin.
Sprinkle with salt and pepper; dredge with flour.

Saute cutlets in butter on each side until browned. Add grape juice; cook 1 minute over medium heat. Remove to a warm serving platter. Add broth to skillet; bring to a boil, stirring occasionally. Pour over chicken.

Yield: 2 servings. Enjoy!

I like to serve with sweet potato fries and asparagus for a colorful and healthy meal.
