Ingredients

3-4 chicken breast, boneless and skinless, cut into 1 inch cubes
1 large onion, chopped
4 or 5 garlic cloves, finely minced
1 Tbs ginger, grated
1 tsp ground cinnamon
1/2 tsp ground allspice
1/8 tsp cayenne pepper, or to taste
1 (14.5 oz) can diced tomatoes and the juice
4 cups low sodium chicken broth
6 ozs dried apricots, halved
Directions
1) Spray a non-stick skillet with cooking spray and saute chicken until done.
2) Remove chicken and add onion, saute till softened, then add garlic and ginger and saute a minute or so.
3) Add spices and cook till fragrant.
4) Add tomatoes, stock, and apricots.
5) Cover and simmer for about an hour, or until apricots are soft and sauce has thickened.
If cooking in slow cooker, follow steps 1(don't cut chicken up and just cook till browned) and 2, then place all ingredients in slow cooker and cook on low for 5-6 hours.
