Adjust the spices as you like for taste; we like it spicy! This is an update of another member's recipe, only with half & half and added spices; I needed to post it to see the calorie intake. Ingredients

    1 pound of raw boneless skinless chicken breast
    1 large onion, thinly sliced
    1 can of diced tomatoes (I used the one from Del Monte with peppers and onions for extra spice)
    1 tsp ginger, minced (I used ginger paste)
    1 tsp garlic, minced
    1 TB tomato paste
    1/4 tsp salt
    4 tsp curry powder
    4 tsp cumin powder
    1 tsp canola oil
    3/4 cup half and half or evaporated milk

Directions

1. In a medium skillet over medium heat, cook onions in oil until browned. Add ginger & garlic and cook 1 minute.
2. Add curry & cumin powders and cook for 1 minute. Add diced tomatoes and cook until reduced and well combined, approx 5-7 minutes.
3. Add chicken, tomato paste and salt and cook until chicken is no longer pink.
4. Add half and half, stir, and simmer until chicken is cooked through.
