Introduction
Meat and Potatoes are a favorite of my West Texas born and raised husband. Add some eggs, or in my case eggs mixed with egg whites to keep it healthier, and you have a hearty breakfast. I eat mine plain. My husband loves it with hot sauce and sometimes cheese. We also like to wrap in tortillas for on the go breakfast. But remember all those ‘extras’ means more calories added. Ingredients

1tbsp olive oil
½ smoked sausage, sliced
1cup onions, sliced
1 large potato, diced
2 large eggs
1 cup egg whites
Directions
Saute diced potatoes and olive oil in skillet over medium heat for approximately 5-10 minutes, until almost softened throughout. Add onion and sausage slices. Cook for approximately 5 more minutes.
Beat eggs and egg whites in bowl together until mixed. Add to sausage and potato mixture. Cook until eggs are done.
This makes about 6-8 servings, depending on your serving size. If putting in a 8" burrito, it makes about 8 burritos.
