Introduction
I make this with whole grain rotini. I like how the slight sweetness of the honey mustard evens out the earthy taste of the pasta. I usually portion the leftovers into 2oz servings and freeze for a quick lunch during the week. I make this with whole grain rotini. Ingredients
-
1 box/16 oz whole grain rotini
1/4 cup light honey mustard salad dressing
1/4 cup light mayonaisse
1/4 cup grated parmesan cheese
Directions
Cook pasta until just slightly al dente, usually about 12 minutes or so. Put dressing, mayo, and parmesan in small dish and whisk together until smooth or no lumps in parmesan.
After pasta is done cooking, drain and rinse thoroughly. Put 2 tbsp of sauce in bottom of dish. Then add pasta. Pour remaining amount of sauce over pasta. Stir together from bottom until all pasta is coated with sauce.
Makes 8 - 2oz portions.
*For a little different taste, you can add chicken or beef stock to your boiling water or even a small amount of wine while pasta is cooking. It gives it a nice flavor.
