Ingredients

1 Tablespoon olive oil
2 boneless, skinless chicken breast fillets (approximately 4 to 5 ounces each)
1/4 teaspoon ground cumin seed
Dash of salt
Dash of freshly ground black pepper
2 chipotle peppers canned in adobo sauce (you'll have to buy a 7 to 10 ounce can and save the rest in the refrigerator for future use)
1 cup fat-free Half & Half
1 Tablespoon fat-free sour cream
Directions
Heat olive oil in a heavy skillet. Meanwhile, pierce chicken breasts with the tines of a fork and sprinkle them with ground cumin seed, salt and ground black pepper. Split chipotles lengthwise and remove seeds by rinsing under running water. Mince chipotles and scoop up into a 1/4 cup measuring cup. Add approximately 2 tablespoons of adobo sauce from the can and stir in the minced peppers
When oil is hot, brown seasoned chicken breast on all sides; set aside. Drain remaining oil until skillet is just very lightly coated. Add chipotles and sauce to hot skillet, then pour in the half & half. The skillet mixture should be a light orangish color.
Reduce heat to a low simmer and return chicken breasts to skillet, turning to coat well with sauce. Cover and simmer for 20 minutes, turning occassionally. Remove chicken to serving plates, top each with the skillet sauce and a dollop of sour cream. Extra sauce can be served alongside.
I serve this with my Citrus-Cilantro Salad, a rice dish and chilled fresh seasonal fruit.
