Ingredients

    8 lasagna noodles--preferrably whole wheat
    1/4 cup part skim milk mozzarella cheese
    1/2 cup non-fat ricotta cheese
    1 tbsp. grated parmesan cheese
    1/2 pkg. Mori Nu Lite Tofu
    2 cups no-fat, low-sodium spaghetti sauce
    1/4 cup non-fat mozzarella cheese
    1 pkg spinach (optional)

Directions

Preheat oven to 350 degrees. Cook lasagna noodles according to package directions, omitting salt and oil. Drain, lay out on a clean cloth towel.( If using spinach, wilt in a large frying pan) Combine tofu and cheeses (spinach). Place equal amounts on each lasagna noodle, spreading out as evenly as possible. Roll up jellyroll style. Place roll-ups in a baking dish, seam side down. Top each roll with 2 tablespoons of sauce. Bake covered for 30 minutes.
Note: These may be frozen before baking, omitting sauce until ready to bake.

    I didn't rate this since I didn't rate it but at the bottom of the recipe, but in one place it says 4 servings (I am assuming 2 rolls) but for number of servings, it says 1 serving, which makes no sense since 8 rolls seems like a lot, with the ingredents it would be way more than 180 cal. - 7/8/07
