Introduction

I created this recipe from ingredients in the pantry for our second anniversary dinner. I created this recipe from ingredients in the pantry for our second anniversary dinner.

Ingredients

    6 oz New York Strip, cut in half for two 3 oz servings about the size of a deck of cards
    1 large baking potato, peeled & cut into 1" cubes
    1 cup chopped carrots, frozen or fresh
    1 1/2 tsp steak seasoning (your choice)
    1 cup low sodium beef broth

Directions

Place chopped potatoes in bottom of 2 qt slow cooker. Layer carrots on top of potatoes. Season steak with seasoning of your choice. (I used McCormick Grill Mates Montreal Steak -- free with coupon quite often at Kroger.) Pour beef broth into slow cooker until potatoes and carrots are just covered or almost covered; do not cover the steak. If the steak seasoning has washed off, sprinkle a little more on top. Cook on low for 6-8 hours or until steak has reached desired doneness.
