Introduction

Ingredients

2 cup cooked brown rice
1 cup frozen edamame
1 cup shredded carrot
0.50 cup canned mandarin oranges with a little juice
2 tbsp oyster sauce
1 tsp thai chili sauce
1 tbsp splenda
Other veggies can easily be substituted. The original TGIF recipe uses bell peppers. I have also made it with broccoli and it's fantastic!
Dish is gluten free and lactose free.
Directions
Cook brown rice (1.33 cups uncooked should make about 2 cups cooked).
spray wok or frying pan with cooking spray. Turn heat up to medium-high. This whole dish cooks quickly and has some sugars so work fast!
Add edamame and stir fry for a few minutes till they warm up.
Add carrots and stir a few times. Then add rice and oyster sauce.
add chili sauce
add mandarin oranges and a little juice
right before you take it off the heat, add the splenda
plate and serve. Serves 4
