Introduction

Ingredients

1 cup plain flour
1 cup oats
1 cup dessicated coconut
1/2 cup castor sugar
125g low fat margarine
2 tbsp golden syrup
1 tsp bicarbonate of soda
2 tbsp boiling water
Directions
Pre-heat oven to 180C (350F)
Combine flour, oats, coconut and sugar in bowl.
Melt margarine and golden syrup in small pan and stir well.
Combine bicarb. soda with boiling water and stir into margarine/golden syrup mixture. When it begins to froth, combine with dry ingredients in the bowl, mixing thoroughly with wooden spoon.
Drop heaped teaspoons onto greased baking tray leaving room for them to spread. (I do 12 at a time on a large-ish try)
Bake for 15 minutes, or until golden brown. Rest on tray out of oven for 5 minutes and then remove to cooling rack. Store in an airtight container.
Makes 48 small biscuits.
