Introduction

My husband's mother used to make this rice soup for him and his siblings when they weren't feeling well. It's a very simple but delicious soup. My husband's mother used to make this rice soup for him and his siblings when they weren't feeling well. It's a very simple but delicious soup.
Number of Servings: 4

Ingredients

    1.5 Cups Rice, cooked according to instructions
    1 lb raw chicken diced small
    1 Chicken Flavor Bouillon Cube
    1/4 Cups Fresh grated ginger root or to taste
    2-3 Garlic Cloves
    1/4 Cup Onion, diced
    Salt and Pepper to Taste
    1-2 T Fish Sauce

    Garnish with bean sprouts, mint, lime juice and/or french fried onions/garlic

Directions

Cook rice according to package instructions. Once rice is fully cooked add bouillon cube and raw chicken, making sure chicken is cut in very small pieces. Simmer until chicken is fully cooked. Add ginger, onion, garlic, and salt. Add fish sauce and more salt to taste.

Please note you may need to add water if soup becomes to thick.

Garnish with bean sprouts, fresh mint/herbs, lime juice, and french fried onions or french fried garlic.

Makes approximately 4 servings.

    something is wrong here...only liquid is 1-2 T of Fish Sauce...there has to be some kind of liquid...would love to know for I love this style of soup... - 9/3/09
