Introduction

Number of Servings: 10

Ingredients

    * Lentils, 1 cup
    * *Organic All-Purpose White Flour, 1 cup
    * **Flax Seed Meal (ground flax), 2 tbsp
    * Water, tap, .25 cup (8 fl oz)
    * Soy Milk, .5 cup
    * Cocoa, dry powder, unsweetened, .5 cup
    * Granulated Sugar, .5 cup
    * Baking Soda, .5 tsp

Directions

-Cook the lentils until they are very, very soft. Drain and mash or process until a soft paste.
-Mix together flax and water and allow it to sit for five minutes. Then add to lentils and mix thoroughly.
-Add soy milk and mix well.
-Add the dry ingredients and mix until all lumps are gone and the mixture is smooth.
-Pour into a silicone or greased pan and cook in a preheated oven at around 170 degrees celsius for 50 minutes or until a knife in the centre of the cake comes out clean.
-Cool. Serve wedges of the cake with coffee and tea.

    Good
    What size cake tin? That information is probably the most crucial parts. If its a huge wide cake tin it wont need to be cooked for 50 minutes, however if it is only, for instance an 18cm tin, it will well and truly need at least 50 minutes (id imagine)
