Introduction

Have a zucchini from someone's garden and you have no idea what to do with it? I actually planted them in my garden and had no clue! So poking around my cupboards I came up with this delicious breakfast muffin that paired with a glass of milk, will keep you feeling full for hours!

Also a sneaky way to get your kiddos to eat a GREEN veggie! My kids love them. Ha!

Ingredients

    3 cups granulated sugar (could subsitute with Splenda per subsitution guidelines on Splenda box.. I just don't like giving my kids artificial sweetners)
    3 large egg whites
    1 cup canola oil
    1 cup of white flour
    2 cups of whole wheat flour (you can replace more of the white flour with whole wheat, it will just make a denser muffin)
    1 tsp baking soda
    1 tsp baking powder
    .5 tsp salt
    4 tsp cinnamon
    1 cup unsweetened apple sauce
    2 cups grated zucchini (peel included)
    2 tsp vanilla extract
    .5 cup raisins (or a bunch of your kids snack boxes like I did... haha)

Directions

Preheat oven to 350 degrees celcius.

In a large bowl, mix together sugar, eggs then oil.

In a separate bowl mix together flour, soda, baking powder, salt and cinnamon. Add apple sauce and zucchini then mix well.

Combine the two bowls, add vanilla and raisins and then mix well one last time!

Add a little cooking spray to your muffin tin and scoop 1/4 cup of batter into each cup. I like to sprinkle a tiny bit of rolled oats on the top for looks. Cook for 18-22 minutes until a toothpick inserted into the middle of a muffin comes out clean.

Recipe makes 24 muffins.
