Ingredients

    8 red potatoes
    6 celery stalks
    6 mushrooms
    25 baby carrots
    1 pound pork tenderloin
    salt and pepper

Directions

Chop veggies, place tenderloin and veggies in roasting pan, season with salt/pepper. Cook at 425 for 30-50 mins, til pork reaches 170 degrees and potatoes are at desired softness.

Add garlic and onions etc, whatever to your taste
