Introduction

Ingredients

One 12 oz bag of fresh cranberries (3 cups)
One medium sized lime
One medium sized orange
One medium sized red onion, sliced
1/2 cup sugar
1 cup fresh cilantro
Directions
Finely grate 1 teaspoon zest from the lime, then squeeze enough juice to measure 2 tablespoons.
Zest the orange and set it aside. Remove the peel and pith, and then cut the flesh from the membranes. Discard, peel, pith, and membranes.
Pulse the cranberries with the lime and orange zest, the lime juice, orange segments, onion slices, and sugar, to taste in a food processor until finely chopped. Chill the relish, covered, stirring occasionally, for at least 2 hours (to allow flavors to develop) and up to 1 week.
Just before serving, finely chop cilantro and stir it into the relish.
Makes 10 1/4 cup servings.
