Ingredients

    Black-eyed peas, drained, with salt, 1.5 cup
    Bulgur, cooked, 1.5 cup
    Yellow Peppers (bell peppers), .80 pepper, large (3-3/4" long, 3" dia)
    Green Beans (snap), .33 cup
    Garlic, 2 clove
    Celery, raw, 1 stalk, large (11"-12" long)
    *neufatchel cheese, 4 oz
    Cheddar Cheese, 1.25 cup, shredded
    Olive Oil, 1 tbsp

Directions

saute vegetables in oil
cook bulgur according to directions (pour boiling water over, set for 30 min) drain any water
mix all together
spray square pan or quart casserole
cook on 350 for 25 minutes
