    4 Artichokes
    Balsamic Vinegar
    Olive Oil
    Kosher Salt
    Fresh Cracked Black Pepper
    Garlic (optional)


Preheat oven on broiler setting. Prep artichokes, cut off stems and bottom leaves. Cut the artichokes into halfs and scrape out the inner fuzz and inner leaves. Boil artichokes for 10-15 minutes or until cooked through. On a foil-lined cookie sheet lay the artichokes inside down. Drizzle a small amout of olive oil over the artichokes, then the balsamic vinegar. Sprinkle the salt and grind up some pepper over the artichokes. If you like you can mince up some garlic and place it on the artichoke leaves as well.
Place in the preheated oven and bake for about 15 minutes. Enjoy!
Makes 8 servings.

  • Sounds great except I'm confused on the number of servings. First it says " makes 8 servings" then it says "number of servings 1" please clarify. thank you - 8/25/07

  • sounds amazing! i can't wait to try it - i think the calorie count is off, though. a whole raw artichoke only has 55! So a little added olive oil and seasonings still puts you at under 100 calories for the whole thing (: - 8/21/07
