Ingredients

    2 tbsp olive oil, divided
    1 lb boneless beef chuck roast, cut into half-inch pieces
    1 can (10.5 ounces) condensed beef broth
    1/4 cup merlot, or dry red wine
    1 can (14.5 ounces) stewed tomatoes with italian seasonings, undrained
    1 can (8 ounces) tomato sauce
    1/2 cup chopped green bell pepper
    1/2 cup chopped onion
    2 cloves garlic, minced
    2 teaspoons sugar
    3/4 teaspoons instant coffee granules
    2 bay leaves
    1 tbsp chili powder
    1/2 teaspoon coarsely ground black pepper
    3/4 cup reduced-fat sour cream
    3 tbsp prepared horseradish
    1 tsp salt, or more to taste, divided
    cooked egg noodles (optional, not included in calories)

Directions

heat 1 tbsp olive oil in large skiller over high heat
add beef and cook, stirring frequently, until browned on all sides
transfer to 3 1/2 - 4-quart crock-pot slow cooker
stir in broth, wine, stewed tomatoes and their juice, tomato sauce, bell pepper, onion, garlic, sugar, coffee granules, bay leaves, chli powder, and pepper
cover and cook on hgh 6 hours or until beef is tender

meanwhile, combine sour cream, horseradish, and salt to taste in a small bowl
refrigerate in airtight container until needed

stir to break up large pieces of beef with potato masher or wooden spoon
stir in remaining 1 tbsp oil and salt and pepper (to taste)

serve as is or over cooked egg noodles; top with horseradish and sour cream just before serving
