Ingredients

    4 chicken breast (about 4 oz each)
    1 granny smith apple (cored and sliced)
    1 med onion slice and pulled into rings

    2 tbs olive oil
    1/2 cup apple cider vinegar
    1/2 cup apple cider
    4 tsp brown sugar
    1 tbs cinnamon
    salt and pepper to taste

    4 cups egg noodles

Directions

cook egg noodle as per package instructions

in a deep skilet heat 1 tbs olive oil. Add apple slices and cook till slightly browned, about 5 min...then sprinkle with brown sugar. cook until apples are tender. put in a bowl...take chicken and sprinkle with the cinnamon salt and pepper..in same skillet heat remaining olive oil. and brown chicken. about 5 min each side. set aside the chicken. in same pan saute the onion rings for about 1-2 min then add vinegar and cider let simmer for about 5 min..then readd the chicken. spooning the sauce over chicken while it is cooking...cook until chicken is done all

on a plate put 1 cup of noodles, add a chicken breast on top and spoon some sauce over. add onions and a few apple slices to garnish....

    Very Good
    I had to make this ahead and then held it in the oven for an hour or so. The apples got a bit mushy but it was delicious, we had it with quinoa/rice. I didn't have apple cider but I had mulling spices that I steeped with 1/2 apple juice and 1/2 hot water. My kids liked it as well. - 1/11/13

    I made this and my whole family LOVED it. I used thick boneless pork chops instead of chicken and served it w/ green beens and butternut squash. It was moist and tasty. I'll definitely be making this again. - 10/30/10
