Light & Fluffy Baked Lemon Dessert Light & Fluffy Baked Lemon Dessert

Ingredients

    100g Fat Free Cream Cheese
    3 unwaxed lemons (zest and juice)
    3 medium eggs (seperated)
    3 tbs (or 9 tsps) Splenda

Directions

In small bowl allow lemon zest to infuse with the lemon juice for about 1/2 hour. Once stood place in large bowl add the splenda, mix and place to one side. In seperate bowl mix the fat free cream cheese with the egg yolks. In another bowl whisk egg whites till stiff. Add lemon/splenda mix to egg yolk mix and fold together. Spoon in one tablespoon at a time into the egg whites until all absorbed. Fry Lite an 8" oven proof dish and pour mixture into this. Bake in top of oven at gas mark 2 or equivalent for approximately 30 minutes till lightly brown. Serve either hot or allow to cool and refridgerate.

    If you like it ultra-lemony, this is your treat! Even the big lemon lovers who tasted my results from this recipe thought it was a bit on the tart side. (Needs more Splenda?) Didn't bake real well -- the bars came out very, very crumbly. Best eaten with a spoon, perhaps. - 6/6/09
