Introduction

I get the Members Mark Bruchetta at Sam's Club and I serve this over Wheat Angel Hair or Spaghetti Squash. I do not like breading so I do not use flour. How long it takes depends on you. Any new recipe you take longer and when you get to know it it takes less time. first time around I would say 30 minutes prep. Ingredients

    10 oz. Boneless Chicken Breast
    2 tbs. Capers rinsed and drained
    I small can Reese Artichoke Hearts cut in half, rinsed and drained
    1/4 cup lemon juice
    2 tsp. fresh chopped garlic
    1 cup chicken broth
    1 cup Members Mark Brushetta

Directions

Flatten chicken breasts out between two pieces of waxed paper till approximately 1/4 inch thick and then cut into nice sized medallions . Spray frying pan with Pam and brown chicken pieces. After browning add chicken broth cover and finish cooking on low heat. After chicken medallions are completely cooked add lemon juice, capers and garlic. Stir and then add the rest of the ingredients. Ladle over spaghetti or squash or just have a salad with it. I will update with how much per person.
