Introduction
This is a lo-cal, lo everything, nutritious version of one of my favorite dressings. It's great as a dip or spread. Shh! the secret to the nutrition and lo-cal is the tofu, don't tell anyone. This was my first try with tofu and I'm delighted. I hope you enjoy it as much.For variation: try a few anchovies, capers, anchovy paste, tuna or just the water from canned tuna. Ingredients

2-3 garlic cloves
1 tbsp best olive oil
1/4 cup grated parmensan cheese
1/4 cup lemon juice
1/4 cup water
2 tsp grey Poupon mustard
1 tsp worchestershire sauce
6oz soft tofu
Directions
Saute garlic that has been finely minced or pressed until translucent or just starting to brown (this gives the garlic a sweeter flavor, if you prefer the hotter garlic flavor skip this step.) Add the garlic to the other ingredients and puree until smooth. For a thicker dip consistency use less water, use more water for a thinner consistency. Add salt and freshly ground black pepper to taste.
Makes 1 cup of dressing or 16 1 tbsp servings
