I had leftover dry bread and some very ripe plums. I needed to find a way to use them up. I ended up making a bread pudding. I use half sugar/half splenda to bring the calories down. Ingredients

* Plums, 3 fruit
* Granulated Sugar, 0.25 cup
* *Splenda Sugar Blend for Baking, 0.25 cup
* Egg, fresh, 2 large
* 1/4 tsp lemon zest
* sprinkle nutmeg and cinnamon
* Bread, mixed-grain (includes whole-grain, 7-grain), 1 or two slices.
Directions
Halve plums. Put each one cut side down inside a muffin tin. Cut dried bread (1 or 2 slices) into small cubes and cover the plum.
Heat oven to 350 degrees.
Custard:
Mix egg, sugar and lemon zest in a bowl. Sprinkle a small amount of cinnamon and nutmeg. Beat with a whisk until airy. Spoon over plums and bread in muffin tin.
Bake in oven 20-25 minutes.
Serves 6.
